A fish alternative to hog roast Devon!

Fish and cheese? Are you having a laugh? I can see you scrunch up your face as I type, but hold on my son, this is a belter, so simple but so tasty and I’m not codding.

Serves 2

I piece of firm fish like Cod enough for two
100g of mature cheddar
Onions 2
Tomatoes 2
salt and pepper
cooked prawns to garnish

Make sure the fish is very fresh, tip, it shouldn’t smell of fish!
Place (he he) the fish in a shallow casserole that has been oiled with some olive oil.
Meanwhile finely slice onions, tomatoes and grate the cheese.

Assemble the onions over the fish, season with salt and pepper and then overlay the tomatoes on top of that. Season again and drizzle with olive oil.

Put it oven for 10 minutes at 180% fan oven.

Remove from oven after 10 minutes and sprinkle cheese over the top, put back in the oven for a further 5 minutes or until the cheese starts to bubble and go golden.

Remove and serve with a green salad with the prawns lurking in the foliage , add a crispy baked potato (to crisp lightly coat in oil and sprinkle with salt prior to baking) with butter.
