Hog Roast Devon Rice Salad

Delicious with the hog roast Devon Bbq spare ribs!

Serves 4
100g of long grain rice
5 tablespoons of oil and vinegar dressing
300g firm ripe tomatoes
3 stalks celery
1 red pepper
8 black olives

Cook rice in boiling salted water for 8 mins or untill tender but not overdone. Do not stir! Drain well and put in bowl.
To the hot rice add half of the oil and vinegar dressing, toss to cover all the grains of rice and set aside untill cold.
Cut the tomatoes, celery and red pepper into nice looking strips or chunks (your choice!)
Add this to the cold rice salad together with the black olives and splash on the remaining dressing.
Serve with hog roast Devon or ribs!
