Hog Roast Devon Southern Oven Fried Chicken

Oven fried chicken seems to be a contradiction, but the result is the same and much less greasy. The Colonel would approve!

8 chicken joints
1 egg
half a cup of milk
2 teaspoons of Kikkoman soy sauce – you can get this in the Coop
1 tablespoon olive oil
breadcrumbs for coating
spices
1 ground teaspoon each of
oregano
chilli powder
sage
marjoram
black pepper
garlic
2 teaspoons of
salt
onion salt
paprika
4ozs of butter

Trim the chicken joints and remove the skin (healthy option, leave them on if you love them)
Mix the egg, milk and soy together in a shallow dish. Mix the spice mixture together with the breadcrumbs. Dip the chicken in the egg mix and then roll in the breadcrumb mix to coat on all sides
Put the butter and oil in a roasting tin and heat in the oven at 190c until quite hot.

Place the chicken in the tin, baste with the hot fat and cook for 1 hour basting occasionally. There is no need to turn them as they will become brown and evenly cooked.

Serve with oven chips or baked potato and green salad.
