Pork Chop Recipe

A stunning dish that is very tasty and easy to make.

Serves 2
2 good size pork chops
1 large onion
2 celery stalks
2 medium carrots
1/2 pint of cider
olive oil
salt / pepper
1 small cup water

Fry the chops in a shallow pan with a little olive oil, until golden but not cooked through. Say 2 / 3 minutes. Remove from the pan.

Meanwhile in another small pan add the cider and reduce until the consistency of cream. Take off heat.

Roughly chop the onion, celery and carrots and fry in the same oil for 5 minutes turning regularly. Season with salt and pepper.

Add the chops and veg mix to a casserole pan, add the cup of water and reduced cider and cover with lid or silver foil and cook oven at 200% for 15 minutes then turn down to 180% for 1 hour.

Remove from oven and serve the chops and wonderful gravy with mash and seasonal greens.
